I am new to the all grain game and am currently building my setup. I have a 25gal stainless stock pot with a false bottom that I will be using as a direct fire mash tun. I also have two 15 gal keggles that will serve as the HLT and wort boil kettle. Now to the question, I have one thermosight that will mount to one of these kettles. I did not want to spend the extra money for more mounted thermometers, I will just use a long stem portable for the other two. What is the best kettle to mount the thermosight? Mash tun?
 
I would say so. Mash tun is the most temperature critical out of the three. HLT are pretty easy I use a Thermoworks digital with an alarm once it reaches the temp I want.
 
Thermosight? Do you mean a Thermowell, a Sight glass, or a 1/2" NPT coupler ported onto the pot?
 
Yes, thermowell. I guess I got it because it looked cool and seemed functional. I may have gotten a bit carried away when my wife let me have a chunk of our tax return to invent in my new obsession.
