Hi all,

So I finally got the Mr. Beer homebrewing kit, and after watching the instructional video I have a question. The video recommends a 2 week period, but I'll be going out of town for a while. If I started the process now, it would be 2.5 weeks before getting back.

Will the extra few days of fermentation pose a problem? I hope to not have to wait to begin until I get back.

I have not used Mr. Beer....... but, in general, there is really no difference at all between 2 or 3 weeks as far as fermentation. If anything, a few extra days might do it some good. I think you are fine, but perhaps someone more familiar with a Mr. Beer might have something to add.
 
It will not be an issue at all! I would also recommend fermenting at a lower temperature than they suggest (mid 60's F will work well).
 
I started out with Mr Beer and always let it ferment at 68 degrees for 3 weeks before bottling. Never had an issue. I still use it on occasion because it fits in my chamber with my 5 gallon carboys.
 
Thanks! I put the wort/yeast mixture away for fermentation last night. Can't wait!
