got a Mr.Beer been playing with it and decide to try something new this will be a 2 gallon batch and if you see anything i need to change to help me just post it up. ok heres what i was thinking.

1/4 pound of chocolate malt grains
1/2 pound of crystal 40
1/2 pound of crystal 60
1/2 pound of honey malt grains
2 pounds of two row

1/2 oz of US Goldings hops boiled for 30 mins

SG = 1.049
FG = 10.12
IB = 13
Color = 23

What dry yeast would you use?

That's going to be VERY VERY sweet with all that crystal and honey malt. I'd back it down to something like:

3.5 lbs. 2-Row
1 oz chocolate malt
2 oz crystal 40
2 oz crystal 60
2 oz honey malt

1/2 oz of fuggles for 60 minutes.

That will give you something around 1.05-1.053 OG, 22 IBU, and a good copper/light brown color.

Are you doing a full boil? Or topping off? If you're new to all this, I might give steeping grains or a partial mash a try.

I agree- WAY too much crystal and honey malt in a 2 gallon batch in your recipe.

I'd say you could safely go up to 6 ounces of crystal malt if you want something pretty sweet, and lower the chocolate and honey malt accordingly.

What style are you going for??

looking at this...could be close to a 11C. Northern English Brown Ale
Vital Statistics:

OG: 1.040 – 1.052
IBUs: 20 – 30 FG: 1.008 – 1.013
SRM: 12 – 22 ABV: 4.2 – 5.4%

But to get it better in this catagory you will need to:
+two row by a .25lb
-chocolate by a .25lb
swap honey malts for Biscuit(give more of the nutty flavor)
+ fuggles .5oz @30min
yeast: 1026 english cask ale

SRM:25.68 OG:1.050 IBUs:29.05

but like the rest have said...that is a lot of crystal.

changed my mind on the hops. i realy don't like to much of bitter beers. but i like newcastle but wish it was a little less bitter on the after taste. this will be a mini mash or steeping grains.

Honey malt should be mashed, but if you don't add any basemalt grains in there, it's still a steep.

ok how about this.

2 oz. of chocolate malt grains
4 oz. of crystal 60
2 oz. of honey malt grains
3 pounds of two row

1/2 oz of US Goldings hops boiled for 45 mins

SG = 1.049
FG = 10.12
IB = 22
Color = 15

about 4 oz of brown malt would also be a nice touch if you want something nuttier to balance the sweet, something like Hugh Baird Brown Malt. this might tend more toward a nut brown ale with that addition...

EDIT: Given my post below, I would adjust this to 3 oz. I forgot you said 2 gallons, and not 2.5....

here's a 5 gallon recipe that i made recently that was excellent:

8.5 lbs 2-row
8 oz. Hugh Baird Brown Malt
1.5 lbs Munich Malt
5 oz Crystal 15L
8 oz Crystal 60L
5 oz Crystal 120L
4 oz Pale Chocolate Malt
1 oz Cascade Hops (7.5%) (60 min.)
.50 oz Saaz Hops (3.5%) (30 min.)

i guess this is what i might try now.

3 oz. of chocolate malt grains
4 oz. of crystal 60
2 oz. of honey malt grains
3 pounds of two row

1/2 oz of US Goldings hops boiled for 45 mins

SG = 1.048
FG = 10.12
IB = 22
Color = 17

What yall think?

Or this.

3 oz. of brown malt
4 oz. of honey malt grains
3 pounds of two row

1/2 oz of US Goldings hops boiled for 45 mins
