I am brewing an RIS on Sunday via BIAB. My results from multi stepping on ales has been very fruitful, However I have not done a beer this big yet. Full boil volume is planned for 7.5 gallons starting with 6 gallon mash (with a ton of bag squeezing)after 90 minutes and 1.5 gallon dunk sparge.
My planned mash schedule is as follows:
110* for 15 minutes to glutanize the oats (2 lbs flaked)
133* for 30 minutes diastatic rest
153* for 30 minsacharification rest
168* 15 minute mashout
168* dunk sparge to be added to boil kettle
Beer smith says 4.5 abv but I have used this technique on pale ales and have come in over 7% consistently.
Thoughts?
