Moved a bunch of beers to frig and after tasting a few think they need a little more time in the pantry. Can I move them back or will this ruin the beer? What would the effects be?

You can move them back, it'll be fine. Fridge temps won't kill yeast (especially not in a short period of time), it just slows them down or makes them go dormant.

So going from cold to room temp and back will not have an effect on flavor?

No, not in my experience, so long as they're not exposed to sunlight or temps above what the yeast can tolerate (above ambient room temp)
