Maybe this is a stupid question / Instead of getting close with a spreadsheet, would it be accurate to assume making a mini mash, keeping water/grist ratios the same and then measuring ph to be accurate when adding adjuncts or a specific grain where there is no data on yet ?
 
Yes, it's quite common to make a 1-lb mini-mash, especially for folks new to pH adjustments or when using malts that you're not familiar with. I do it only when really needed since it does add time.
