We are from the great Town of Vernon located west of Milwaukee and have been brewing for a couple of years, strictly seat of the pants. We haven't dumped a batch yet, but have had a couple that were used to mix. In our last brewery board meeting it was decreed that we get serious (yeah, right) about our brews. We are big fans of stouts, and are considering trying a barley wine soon. The aging thing is the only hurdle. Keeping our hands off the brew that long is an impossibility in our world.
