I have a one gallon jug, but would like to use that to rack into as a secondary. Is there a concern with using a 5-7 gallon fermenter for primary? I planned on using one of my normal units for beer making but didn't want there to be an issue with that for a one
Gallon recipe.
 
There is no problem unless the circumference of the vessel is so large that you lose a very large percentage of the volume of your mead. If you make, say 1.5 gallons to be sure to fill the 1 gallon carboy then there should be no problem whatsoever...although I generally use a 2 gallon bucket as my primary for a 1 gallon batch..
