Ok, so Im poor right now, gonna be (I hope)buying a house soon, need something that ferments a long time (keep running out of bottles, and haven't gotten kegging stuff yet) sO im wondering, what kinds of beers take a long time to ferment?
 
make a big belgian with honey instead of cane sugar or candi. It will take a long while to ferment due to the honey, and the extra aging will only benefit.

hhmm big belgian.... sounds BIG! where would I start with this? threads? recpeis?

If you like sour beers, they take 8-12 months minimum, and will certainly improve beyond that. Gueze is a blend, traditionally, of 3, 2, and one year old lambics. So if you brew a plambic, you could let it age/ferment for three years before bottling with one(or many) younger batch.
