Ok, so I typically rack my belgians to secondary when FG quits moving. Any other beer style I leave in primary for up to a month and just keg.
I know a lot of you leave the belgians in the primary and don't bother racking, but does a long primary mellow out or dissipate the esters. I like the fruity easters thats why I like the style and I want them to stay.
I was told long ago that a lot of belgian brewers rack to secondary at near terminal gravity to lock in ester profile. I believe this process is on Westmalle's website.
I like the idea of leaving the beer in the primary and mot messing with it. May try it, if I can keep my esters can someone chime in
