June 9, 2011 – Moving my cellar last weekend I found this bottle had leaked to about where the body of the bottle starts to taper into the neck. I figured there wouldn't be much to this bottle but when I uncapped it the cork started to push its way up so there was still plenty of carbonation left in the bottle. 5-8 years old is about where I prefer Cantillon Gueuze and this one is in the perfect spot. No hint of oxidation or age but for a deep brett and oak character. This is not overly sour like some older Cantillon can be and there's no hint of acetic acid. The head didn't stick around for long, but it's got great body and feel. Happy I have a few more of this date left.
