I know. What does that have to with the issue I'm complaining about? I'm talking about the website changing quantities in your cart incorrectly, not about something selling out while it's in your cart.

you're complaning about something i've never seen in buying ~60 boxes from etre over the last 6 years or so.

I've had it happen dozens of times in the past few months. Pretty much every time I try to edit the number of bottles of anything in my cart when there's something in my cart with a bottle limit (even if I'm editing quantities of a different bottle with no limit). Other times when I try to buy three of something that has a bottle limit of three, it will repeatedly lower the quantity to 1, even when there are plenty of bottles left in stock.

I've had this happen a bunch on the last couple times I went to place an order. Drove me nuts and eventually just led to me placing an order at Biab instead though I didn't get the loons I wanted

So this is a random question...

Lambic.info tells me that Cantillon uses fruit that has been flash frozen so they can brew throughout the season and not let the seasons/harvests dictate when they can brew certain beers.

Is it safe to assume that in a traditional sense they would ideally use fresh or frozen fruit but never fruit that has been cooked or turned into a syrup?

The reason I ask this is because im having a hard time understanding why mamouche is made with elderflowers and not the berries. I think its interesting that someone decided that the flowers would contribute more (or a better character?) to a lambic than the fruit. However, the stipulation being you shouldnt consume fresh elderberries, they need to be cooked in order to neutralize the glycoside which could induce cyanide poisoning.

I doubt the reason they used elderflowers instead of elderberries was the necessity of cooking the elderberries. Had they wanted to make an elderberry lambic, they would have simply prepared the fruit as is needed. I strongly suspect the actual reason is that they didn't want to use elderberries, as elderberries and elderflowers don't taste much alike at all, despite coming from the same plant.

I had always wondered the same thing and agree with duketheredeemer here. Anything I've ever had made from elderberries tastes totally different than anything I've ever had made from the flower. Would be cool if they made an elderflower and elderberry lambic and we could all just do a comparison.

Yes, based on my experience with the 2013 I had earlier this year and the initial reviews I saw of the 2015, I wasn't expecting much, but I was very impressed. Lots of funky already, a very tasty geuze and pretty different from any of the regularly available geuze out there (though closer to Boon than anything else, not surprisingly).
 
I have ordered from Etre many times, and never once has my order been through the website itself. For some reason no matter what computer/device I try to order from the website will not allow me to check out. All of my ordered are done via email with Etre. Biab on the other hand is as smooth as can be.

I really liked when I had it at Toer de Geuze but when I had it again last weekend it wasn't nearly as good. Seemed like the different lambics needed more time to really blend together.

Yeah my experience is that the BiaB website works very well, the Etre website not so much...whereas Etre E-mail communication is mostly really good, BiaB not so much. (That said, I find Kurt a much more pleasant/friendly/helpful person to interact with than any of the people at Etre...he's just really ****** about responding to E-mails in a timely way, or sometimes at all.)

How do you place an order through email? I don't like the idea of emailing CC numbers to anyone...

He sends you a paypal invoice. You don't provide CC info via email. I had issues when trying to order via etre, but i was using my work computer which had an outdated version of Internet Explorer. I did the whole email order bit once.
 
I haven't had as much trouble with etre's website as some of you guys, but have experienced the random changing quantities in the shopping cart. I've also done the order via email when filling up an existing box - I'll ask how much room I have (because I'm an idiot and can't figure it out myself) and then tell him which bottles I'd like to add to fill it out. Paypal invoice follows easy peasy.
 
So this may be a stupid question but I couldn't really find an answer to this...if you store a bottle upright (say a new bottle I have that has just been sitting upright in the fridge), is there any point in using a lambic basket? Specifically I want to crack a new Horal Mega Blend that's been in my fridge since I got it. Also, any reason to decant this bottle?

I can't speak to decanting that specific bottle but a lambic basket helps prevent the lees from pouring out of the bottle. If you pour the whole bottle in 1 motion, there's no need for a lambic basket ever. But if you're going to pour half of it and then pour the rest later, the basket helps keep it from tipping all the way back vertical, and then having to go horizontal again to disturb the sediment the least, so they can be useful no matter how the bottle was stored.

On a somewhat related note, I thought the 1L Cantillon pitcher I purchased a while back would allow me to pour an entire 750ml at once, leaving the lees in the bottle. Doesn't exactly work like that. The interior of the clay pitcher has a ton of nucleation points, so as I poured a bottle of Gueuze to christen the pitcher, it foamed, and foamed. I stood there holding the bottle at an angle waiting for the foam to subside so I could continue pouring without stirring up the sediment. Seemed to have defeated the reason I purchased the pitcher (though it still looks cool).

Now I know why they make 2L pitchers. ;)
 
Has anyone tried Golden Doesjel 2012 and 2013 side by side, or just had both enough times to know whether the two vintages are pretty much the same or whether there are significant differences?

Awesome thanks, that makes a lot of sense. I'll probably decant it to both save the hassle of worrying about sediment and to see how it changes from first pour to last.

are you unable to click the confirm order button? I have the same issue, I just click through checkout to the final page then manually paste this url that is supposed to be linked with the button and it takes me to paypal to pay and finalize checkout

Glad to have found this thread. Stumbled through 293 pages worth of quality discussion over the past few weeks. Quite an education! Enjoyed a 2011 3F Golden Blend this past weekend and look forward to trying others. Damn you Mark Compton for getting me thinking about Lambic.
