Any tips for getting a falling apart cork out of a bottle? I have a 6 yr old Cantillon Iris I'm itching to crack open this NYE. Not sure what condition the cork is in, but best to be prepared, amirite?
Six years old isn't old enough to have cork issues unless you're crazy unlucky. Cantillon's corks do suck and with time they start to break, but the only one I've ever had serious issues with was 30 years old.

Anyway if you do have a cork fall apart catastrophically on you, just pour through a strainer.

Thanks, I wasn't really sure since I don't have any experience with older corked beers.

It's not really a big deal. If it break, just screw the thing in again, and pull the bottom half out. You may end up with a little cork in your beer but it's not like you're the king of England or anything.
 
I think someone brought up how 2013 cantillon kriek was drinking a few pages ago. I can also verify that it is tasting mighty fine right now as well.
 
I made it! Took me a few days at work but I made it! So now all my unanswered questions :

1. It looks like the 2 main sites to buy lambic/gueuze are etre and biab, but what are the bottle counts to hit to make shipping workout?
2. The only lambic/gueuze I have seen on a shelf is a 3F golden doesjal 375 for $25. I bought it because I was excited to see it. Is there a place where I can see what $ amounts I should look for on each bottle, specially for shipping since my county sucks.
3. I have a coolship, does that mean I homebrew lambic, SeaWatchman ? Water profile for lambic Haha

It’s been a while since I’ve bought from Etre, but when I did, 18 x 750 mL was the ideal weight.
 
11 x 750 on Etre. 30 lbs weight exactly.

I have a question about Boon. I try to keep most of the lambic breweries clean on Untappd, but I don't really understand their vintaging on Oude Geuze. So, for instance, you have something like these 2009-2010, but I thought there were also ones with just one date (I can't find them right now, though, so maybe I'm just wrong). How does this work? The best by date seems to be 20 years from the latter year on the label, so should I just merge a "2010" entry into "2009-2010"? How long have they been doing the double-date thing?

So you've got Mariage Parfait that is a definite vintage date (2003, 2004, whatever). As I see it the Boon OG neck dating system of 2009-2010 talks about the season in which it was released, though not necessarily brewed. Then their should be a 10 or 20 year best-by date on the reverse label. At least that's how I've always seen taken it.

What do you mean by "season"? Is that just "winter of 2009-2010"?
 
What is the ratio of 11 750 to X 375s?

Weights are listed and sometimes vary slightly (e.g. most 375s listed at 1.8 lbs but some are 1.7 lbs or 1.75...just like most 750s are 3 lbs but Fantome are 2.75 for some reason). But in case this saves anyone time doing math, since I've done the math myself a million times: with standard weights (3 lbs and 1.8 lbs) you can start with the 11x 750s and sub out 5x 375 for 3x 750, so for example can do 11x 750...or 8x 750 and 5x 375...or 5x 750 and 10x 375...etc.

I brought up a 2014 Cantillon kriek 375ml a few pages back. It was a total sour bomb. Very little fruit. Never thought I'd drain pour a Cantillon, but it was very acidic.

I had my first Cantillon Kriek, 2014 vintage 750ml (have to check date) and loved it. Was very fruity, like a really juicy, jammy, ripe cherry taste, and perfectly sour for my taste. I don't like overly sour beers and this was right up my alley. Less sour than say a Rose, but i've never had a rose within a year of bottling.

2009 vintage bottled 12/27/2011
2010 vintage bottled 02/22/2013
2011 vintage not yet, or at least it hasn't been available yet that I've seen.

Any idea of bottle counts on those?
