I'll pour the whole bottle into 3 glasses to agitate dregs less and not need a basket.

A huge related pet peeve of mine is taking a vintage lambic to a share where people are too casual with pouring, then righting the bottle, pass, pour, right the bottle... ensuring the last few people get the cloudiest pours they can. Or needing to pick up and inspect the bottle to check out the date and shake things up.

This guy gets it.
 
you act like i didn’t already drink 1/3 of the glass before getting around to taking a picture, and like i didn’t solo the remainder of the bottle while watching ep 5 of chernobyl and becoming even more disappointed in humanity.

not all of us give a **** about baskets and presentation.

fwiw, it probably needed another 3-4 years to hit my own personal st lam sweet spot but who cares.

It's not about presentation or baskets it is about clear pours. If you like cloudy pours of lambic and gueuze then ok but it tastes better without the yeast.
 
I’m pretty amazed at the turn this thread took today and just how picky people are about their lambic pours. To me, my favorite lambic pour is the one in my glass. I’m not gonna dirty up 3 glasses just to avoid some dregs.

Have you ever done a side-by-side with a clear pour and a cloudy pour from the same bottle?
 
It's not about presentation or baskets it is about clear pours. If you like cloudy pours of lambic and gueuze then ok but it tastes better without the yeast.

My favorite is people at Cantillon getting the bottle out of the basket, pouring, putting it back in the basket, giving it to the next person, said person removes it from the basket, pours, puts it back and so on.

Some employee there looked really weird at me when I drank dregs straight from a bottle though, so I'm no snob myself, but the situation described above somehow really bugs me.

Who cares about bottle storage, I wanna know how people store their baskets. Do they hang them horizontally or vertically?

Id love to see a trend started where people use baskets as single use only items. When you uncork the bottle, you immediately have to set the basket on fire and finish the beer before the basket turns to ash.

Well you don't want the previous bottle to contaminate/infect the next bottle you open right?

It is somewhat of a passion of mine to talk **** on what I feel is poor prices.

But to put things in perspective, its been a good 12 years since I last saw cantillon and drie fonteinen on a shelf near me with any consistency. Circa 07-09 I remember seeing 3F sharkeybeebeekeyoski for $36 and begrudgingly paying for one. If I could turn back time, I woulda bought more.

Who knows what the beer world will be like in another 12 years. Maybe in 2031 cantillion will be canning lambic while the rest of the beer world moves on to dehydrated milkshake hefeweizens in resealable aerospace ready bags.

That way you could take a case of beer with you on a plane!

That was announced before they got to 100% but yeah, I’m really excited they’re going to get this done.

Any indication of date on the label? I enjoyed a "2012" a year or so ago, and I'm having a "2003" tomorrow. Will report back.

Oh yeah, my "2003" label De Cam Oude Lambiek was quite nice. Basically what you'd expect aged 3 year lambic to taste. Deep, oaky, a little sherry oxidation vibe, no carb, nice funk, not acidic. Into it.

I had a 2001 (that I’m reasonably sure was actually from around that time since I can trace its origins back pretty far) a couple years ago that was phenomenal. I have another one and a 2000 (the first ever De Cam bottling, I think, if you don’t count Millenium) from the same source still that I’m really looking forward to.

Perhaps this has been announced and I just missed it, but do they have any idea yet how the film will be released? I know nothing about film production and distributing, so apologies if it's way too early in the process for this to be on the radar.
