My buddy Evan built me some lambic racks that I'm very happy with. I drastically underestimated the number of bottles I would have so I'm also looking into having more built or buying something else to hold bottles. I'm officially out of room. Will post pics in case you're interested in the design, just need to dig up some photos.

Apologies for the janky photos. This is in my apartment and although it gets a bit more light than I’d like, we keep my apt at 64 in the winter and around 70/72 during the summer. Not ideal but I haven’t had any issues so far with any bottles I’ve had in this setup.

The custom racks are basically six 6x6 squares, which are put together 2x2 and attached to the brick wall and then the last 6x6 is adjoined by a corner cabinet which holds a bunch more bottles. I also have 6 wooden crates which are overflowing with bottles and then the rest are being stored in cardboard until I have a better solution.

If you look closely, you can see bottles from SP that I owe RyanG and niner99 on top of the boxes. Hoping to get those out tomorrow!

But back to the point, Evan built the racks with the 6x6 concept so that they are modular and I can add to them and/or adjust the configuration whenever I move or change the placement of my bottles. The setup is suboptimal from a space to bottles perspective but I sure dig the look. I’m sure I can ask if you’re interested in the designs, I know Evan drew them up so that they could be replicated. Cheers

Great looking setup!

Probably more jealous of those wooden Cantillon crates though. I haven't been able to get my hands on any of them.

That's beautiful... I have 5 bottles stashed away in a drawer, not sure if that counts as a cellar but someday I'll build a sexy rack anyway.

When he announced his "bomb shelter cellar" JVR said it got as high as the 70's in the summer. That's about what mine does, so I figure if it works for him then it works for me. (Although I did add insulation last spring to help isolate it from the hotter parts of the house, it still probably goes from ~50 on the coldest winter days to ~70 on the hottest summer days, and I think that's fine.)
I also used to worry that my cellar was to warm until reading about that bomb shelter. My range is more or less the same as yours, and seems to work quite well (have aged lambic in there for about 6 years). Fluctuations are slow and only seasonal. However, I'm not so sure it's ideal for my non-lambic/sour beers to hit 70 in the summer...

It's probably fine. If you're only aging for like 5 years it's not a big deal, if you're aging for 10+ then other stuff likely matters more (seal, etc). For that middle range maybe it does? But trans-2-nonenol production is pretty slow at 70 anyway. Obviously exponentially faster than at 55, but you're probably still fine. Though really the only way to know is to try it.

Sounds good. I am long term aging stuff (certainly 10+ years), but mostly lambic. I do however have a few crates of Westvleteren 12 , which I guess would benefit from a bit colder temperatures.

It's hard to say. Like I've had some magical bottles of Westy from De Heeren and their on-site aging is literally just a basement (and it's not even that far underground!). They're cagier about the off-site stuff but I have a hard time believing it's that much better. Same deal with Kulminator, I've had 25+ year old beers there with no hints of flaws and it's just aging in a basement in Antwerp. These places are all going to have similar temperature fluctuations as any other basement. I suppose you could argue that we're like 1C warmer now than when those were put down, but that's not going to make much difference.

My philosophy is that the natural fluctuations in a reasonable basement probably won't hurt, but that it's worth taking relatively easy steps to mitigate the really bad ones (which is why I insulated my space a bit against the hotter parts of the house). If it's not ideal you should be able to find out "relatively" quickly (like 3-5 years) and change plans then.

I’ve had quads aging in my basement as long as 9-10 years that are drinking perfectly.
 
How much does Tilquin gueuze cost on shelf in US usually? I’m considering posting an ISO since it isn’t distributed anywhere I can easily get it and isn’t on webshops anymore, but don’t really even know prices...interested for 375ml and 75cl both.

Alternately, does anyone know a shop around Columbus OH that would carry it? My dad moved there recently and would pick something up for me if I can tell him exactly where to go but I don’t want to send him hunting around random liquor stores.

$20/750ml in NYC. WF used to carry it but now getting harder to find.

Anywhere from 12-15$ for a 375 mL here in MA if you can find it.

It’s pretty common in certain shops in my area, but it’s been a minute since the last drop. I can try and do a C+S for you if I can find some and depending on the quantities you’re after.

My parents in law live in Columbus, so we visit regularly. This summer Tilquin was on several shelves, but I don't know if it always is. My strategy has been to go to Ratebeer and look for highly rated bottle shops, then start calling folks to ask who has lambic. You could do the same, then tell your dad where to go.

Still pretty plentiful near me. Total Wine stocks it, I think 375's are in the $12-13 range and I've seen 750's for $20ish. If you want some for C+ L let me know.

I already DMd The Red Viper, and anyone here who wants I can do C+S. My local has 375s for $11.99 and 750s for $20.99. He does a case (6 bottles) discount too. I think it's 10%.
Stop exporting Connecticut’s lambic stash you buttheads
