I have a large fridge that has a freezer side and a fridge side. I currently use the fridge side for all my ales and stouts and such. But I am interested in doing some lagering using the freezer side.

My question is based on the temperature fluctuations of the freezer side due to the temp probe being on my fridge side. It tends to fluctuate from 47 to 57 in the freezer side depending on when the fridge kicks on to cool the fridge side. Is this up and down temp swing going to alter the beer or affect the lager yeast? I assume not too much since liquids tend to hold temperature for a while, but I wanted some knowledgeable input here. Thanks!

I would say that you really want to limit temperature swings as much as possible, but also, that it should not make much of a difference.

But, if you are lagering you will want to take the temperature of the lager down to a little above freezing. Certainly below the 57 degree mark. What will this do to the beer on the other side?

Well those temps are based on keeping the fridge side around 67 and I could easily drop that down to 65 or 64, which brings me to probably 44 to 54 on the freezer side
