Ok possibly a dumb question but I have an Oktoberfest that is nearing its point of needing to be lagered but I was was wanting to brew my winter lager here pretty soon. So I was wondering, after I do my diacytel rest on the Oktoberfest, would it be feasible for me to leave it at room temp while I wait on my winter lager to ferment down and lager them both at the same time. Or am I risking off flavors in the oktoberfest? This would have been done Ina timely manner but I was faced with a family emergency and I am fairly fresh to lagering beers.
