I brewed a stout about a month ago and I am not super happy with it. I put some coffee in there and it does have a nice coffee flavor but I prefer a little more sweetness. I usually put lactose in my stouts but I wanted to try one without and I am not really digging it.

Is there a way I could add some sweetness/chocolate or something to make this a little more interesting?

Thanks in advance!

At this stage adding cocoa and vanilla using good quality extracts might be the way to go.
If that's not interesting enough you could add some coconut extract to the mix.
For sweetness pull a couple pints of the stout into a small pot, add your lactose, bring it to 135°F+ for a couple of minutes, let it cool covered a bit then dump quietly it back in the keg. Flush the head space with CO2, swirl the contents and give it a try...

Cheers!
