I heard that if your kegerator couldn't hold temps ranging in the 30's that the beer could develope an off flavor. Is this true? I wouldn't think that makes sense.

At any rate what temps do usually set your kegerator to?
 
Mines set at 39-40 degrees.

I don't understand what you mean about having to have it in the 30s though. Some have their kegerators set at 45 or so, I'm sure. It depends on your preferred serving temperature.
 
IMHO the temp you have your kegerator/keezer set at is dependent on what you're serving. The lighter American Lagers from the big 3 (think Bud, Miller, Coors) seem to do well at 38 or so. Heavier/hoppier MicroBrews like an IPA seem to draw out the best taste around 45 or so.
 
My stout and porter are coming out of a keezer set at 55F, the flavour is just fine :D. When they are done I'll be dropping it to the 40's for some Altbier and lagers.

Serving temperature is as important as carbonation for getting the "best" out of a given style of beer.

I set my Johnson temp regulator at 40. Keezer seems to go back and forth between 36 and 44, but thats using a very cheap thermometer to check my temps, so I am not sure how accurate that is.
 
Am I the only one that sets it to 34 F. I live in Texas, 2 min later my beer is room temperature. THe keezer sits on the back porch. what about this off flavor the OP talks about , any truth to that. The only thing I can think of is tasting really cold beer with a high alcohol content. There seems to be a bit of a bite , but the flavor mellows onces it warms up to proper temp.
 
I have my keezer set such that the coldest side (side opposite the compressor hump) is at ~34 F and the two kegs sitting on top of the compressor hump are noticably warmer but I haven't actually measured them yet (just got it set up last weekend). The two kegs in the middle are in-between. The two coldest spots are for lagering/conditioning and the other four are for serving (at two different temps...the ones on the hump are warmer and less carbonated).

I hope to tweek the serving temps and carbonation a little further by adjusting the temp of the glass I'm pouring it into.
