Not sure if this is a daft question but I can't find a definitive answer so thought I'd see what others do.
After racking to a keg I always hook up the gas to carb the beer but then just leave the gas attached and on. Does anyone carb and then disconnect the gas? Is there a correct way to this?
Cheers

Either way works. You do have to leave the CO2 connected until the beer is fully carbonated. Once it's fully carbonated (at equilibrium for CO2 pressure and temperature) the beer will not absorb additional CO2, so the CO2 can be left on. Once the beer is carbonated, and the CO2 disconnected/turned off, the keg just acts like a big bottle (as long as the keg doesn't leak.)

Brew on :mug:
