Hi everyone. I have just started brewing my own beer using the coopers DIY kit. I have followed the instructions and have brewed a coopers lager, a coopers real ale and I have a coopers Mexican cervaza in the barrel. Just want to know if anyone has used these flavours and how long they had them in the bottles before drinking them. I don't want to open one too early
 
Not sure on the Cooper's kits specifically, I'll have to let someone else answer. For your garden variety ale, you'll hear 2 weeks minimum but it really should be more like 4-6 weeks in my opinion. My first beer (Irish Red Ale) took nearly 8 weeks to finally settle out and clarify. I was actually a little bummed that I only had 1 bottle that lasted that long.
 
Double (if not triple) the fermenting time that the Cooper's kit tells you and keep it in the mid to upper sixties. Double the carbonating time and keep it above 70 degrees F. for the entire time. Then open one in a week and see how it tastes. In another week open another and see if it improves. I still have some of their English Bitters that has been in the basement for 6 months and it (at least to my taste) was much better after the first month in the bottle.

If you use the Cooper's ingredient kits they tend to ferment and settle/clear a lot faster than other recipes.

The sg i had on the first two both reached 2 consecutive days at the same reading so I bottled them. This was after 7days for the lager and 6 days for the ale. The lager has been in carbonation now for 7 days and the ale only 2(obviously not ready yet). The fermentation time recommended is 6-7 days so how much of a difference will it make if I leave the cervaza fermenting for 14 days (doubled time as stated in op)
