Per suggestion of another member, I placed the Johnson Temp Controller probe in the thermowell of my SS Technologies Chronical Fermenter. I came back a few hours later to see that the fridge had cooled all the way down to 32 degrees (the controller was set for 65).

Is there really that big of a difference or did my controller overcool?

P.s. The fermenter is a work of art

The air in the ferm chamber will cool down much quicker then the liquid which will take a fair amount of time. I have had the same thing happen with my conical and ferm chamber. When doing 10+ gallon batches I have seen the star san in the airlock freeze! The beer has always turned out great though. I use a blichmann so I am not sure about yours but they say they have done extensive testing and a probe taped to the outer surface with some aluminum foil or other insulator covering it will read the temp of the wort to within 1 degree of actual. In short, your fine.
