So, Scrumpy claims to be all natural, sulfite free, cider. Yet It is sweet and carbonated, how do they pull that off?
 
The terms "natural, all natural, and 100% natural" have different definitions & those definitions are different in each country. One could really make a damned good argument that plastic is a "natural" substance, depending on what the definition of "natural" is.
 
Its certified organic if that makes a difference. I dont think it was filtered.
 
Does it claim to be natural or organic? Two very different legal definitions. You can have organic ingredients that are highly processed. Natural ingredients, through the FDA and USDA, are minimally processed.

My name is Bruce Wright and I can shed a little light on the JK Scrumpy cider. The brand belongs to Jim Koan (JK) and myself. We are very proud of what we have got going. The Koan family has been making hard cider at there Orchard since the 1850s, we have legally made cider for eight years!

We make the cider entirely from apples that we grow organically and yeast. We are certified USDA organic. We do not use sulfite or sorbate. We do not filter or back sweeten. The yeast used is a small amount of champagne and predominantly wild yeast.

We grow, press, ferment and bottle entirely on the farm.

Our fermentation is slow and takes between 9-12 months. You will notice slight variation from batch to batch because apples will slightly vary. We hand bottle,cap and label which is a chore.

The midwest as other parts of the country have lost alot of orchards because of the influx of cheap Asian concentrate. This cider was a way for us to sell a product instead of a commodity. It has helped save a American orchard.

If any of you are ever in Flushing MI Please email me and we will tour the Orchard.

We have also had a lot of attention about farming methods to control pests, please google Almar pigs for more info.

I want to know why hippies decided to hijack the term organic. Scientifically, organic means that the material contains carbon and hydrogen. We are organic. Water is not. Plastic, yes. Apples, yes. Meat, yes. Beef that has come from animals that were feed BGH and antibiotics are still organic.

Hey, JK I was interested to see the term Scrumpy used by an American company. I see on your website that you say
"Scrumpy, Well… that’s an English-style of farmhouse cider that has always been popular on the farms of southern England. It was also known here in the states in the early 1800's . While we are not a English-style cider we are defiantly a Farmhouse Cider ".

I'm curious to know how far your style differs from the original scrumpy. Having grown up in the SW of England, I have had a LOT of scrumpy, most of which will take the enamel off your teeth and re-arrange your internal plumbing. I am interested in comparing your version. Although you don't have a distributor in Ohio, I will try to get some if and when I get the opportunity, as you are not that far away.
 
Very cool to see a commercial producer here. It would be great if you could participate and give us tips on making our home cider even better.

Originally organic meant 'of biological origin,' which I think fits with the 'hippy" definition. Also in the English Language words tend to have multiple meaning depending on context.
 
The hippies started out going back to nature, the goal was to make things as close to the way they were in nature. Natural was the word. Marketing people on Madison Avenue took the term organic and made it apply to what was originally a back to nature concept. The hippies then started using the term that their yuppie customers were using to promote the same concept.
 
I trid J.K. Scrumpy's cider today and it's amazing. It's the best cider I've ever tasted. I can only hope mine will taste have as good as their's
 
My moderately-sized dictionary has 16 definitions for organic (the oldest of which is "from a living organism"). One major dictionary's requirement for inclusion is TEN printed uses of a word in the specific sense. (don't know if they include blogs) Arguing about words in the American language is similar to arguing about virtue in a political body.

Could you tell us what varieties of apples that you use? And the type of chapagne yeast?
