So, Scrumpy claims to be all natural, sulfite free, cider. Yet It is sweet and carbonated, how do they pull that off?

We are in Flushing MI, Not to far from Flint. About an hour north of Detroit.
Its certified organic if that makes a difference. I dont think it was filtered.
Hello all,
My name is Bruce Wright and I can shed a little light on the JK Scrumpy cider. The brand belongs to Jim Koan (JK) and myself. We are very proud of what we have got going. The Koan family has been making hard cider at there Orchard since the 1850s, we have legally made cider for eight years!
We make the cider entirely from apples that we grow organically and yeast. We are certified USDA organic. We do not use sulfite or sorbate. We do not filter or back sweeten. The yeast used is a small amount of champagne and predominantly wild yeast.
We grow, press, ferment and bottle entirely on the farm.
Our fermentation is slow and takes between 9-12 months. You will notice slight variation from batch to batch because apples will slightly vary. We hand bottle,cap and label which is a chore.
The midwest as other parts of the country have lost alot of orchards because of the influx of cheap Asian concentrate. This cider was a way for us to sell a product instead of a commodity. It has helped save a American orchard.
