'ho,
I was given a copy of his and palmers book for Christmas this year and am about to do the Classic American Pilsner. In the book it says to use American 2-row, but on his CAP show he uses Pilsner malt. What would be the taste difference? Would it be enough to offset the costs?

I think that, while you will notice subtle differences between the two, that you will get approximately the same "end result" - just be cautious because Pilsner malt can cause higher DMS production, and you gotta let that DMS boil back off or else you'll get the "canned corn" taste.
