Is Vienna malt an acceptable replacement for victory malt?

I am about 4 oz short of biscuit malt for a recipe but i have vienna and thought I'd make up the difference.. What do you guys think?

It's not even close. You won't hurt anything, but victory is "toasty". If you want to get close to victory malt and are out of biscuit malt, you could toast some malt in the oven for about 15 minutes until it's toasted.
 
Dont the toasted malts have to sit in a paper bag for a few days-weeks or something though? to mellow out a harshness or is this something else im thinking about.Im almost out of victory and have a bunch of 2 row now, im thinking about trying this myself now. What is typical to use like 10% of this toasted malt.?Use it as you would use biscuit,right.
 
Toast 2-row at 300*F for 15 minutes... Done. I don't buy biscuit or victory anymore, it's too easy to toast my own, and the flavor is slightly more complex which I really dig.

I'm doing a pub ale today and my standard recipe calls for biscuit/victory malt and I have none in my huge inventory...

Can it really be this simple to make your own ?????

Yes, I find it very easy, especially for lighter colored malts like victory. All you need is a cookie sheet and a standard oven. Don't forget to store the toasted grain for about 2 weeks. It has a harsh flavor, which goes away during this storage period.

I'm reading about DIY crystal malts...says to soak grains in water first...

to make victory/biscuit do you soak or not? are those are more aromatic than crystal?
 
Different animals.
Crystals are soaked then heated and the enzymes convert some starch to sugar in the grain, hence their name.
Victory/Biscuit is dry roasted.
 
I ended up using some aromatic Munich, about L20.

But this was before I found this thread.

who all here has toasted pale/pils to make an victory/biscuit substitute? And how did it compare?
