I fail to see the validity in your analogy. Tap water is not filthy where I live and has never created an issue. I'm not sure if the acid in Starsan is harmless or not, but I don't intend to bottle and drink it if I don't have to... Jus' sayin.

**This conversation led me to do some research on what exactly is in Star San and I have found assurance thru several sources that it is indeed safe in small amounts and contains the same acids consumed in soft drinks. Not saying I won't keep rinsing out my bottles and kegs, but at least I feel better about it. Supposedly it acts as a yeast nutrient as well. May stop rinsing the fermenter as much anyway.

If at 1.000 then safe to keg. (I might not bottle it yet.) Still might be fermenting a bit and even if it goes to 0.96 would just help with the carbonation. Alternately if crystal clear it could be just off gassing suspended CO2.

A somewhat common procedure of many folks, is to spray sanitizer on a surface, then wipe the surface with a sponge. Sponges are ridden with bacteria and are counterproductive to the sanitation process.
At any rate, you are on the right track.

I think we were both victims of a post reading harsher than it really was intended. I totally understand that a lot of folks have become perfectly comfortable with the sudsy leftovers of StarSan and just ferment/bottle right on top of it. I've seen videos online where guys just ignore it and say, "Don't fear the foam". It still creeps me out - even tho I know it's irrational.
Also, when you asked about the sponge, I just assumed you meant that I was contaminating my batch somehow by rinsing out the foam. Only way I could make sense of that logic was if the rinse water was unclean.
Anyway - it's all good, bro. I appreciate the response. It's good to know somebody is listening.

It's simply not best practice to rinse away sanitizer.

Rinsing both can directly introduce contaminants (water is generally not sterile), and it unnecessarily removes protection during the time that elapses between sanitation and usage.

On the other hand there's no unwanted effects from leaving the foam.

It's rotting buckthorn wood chips I was able to salvage before the DNR came in and eradicated them.
