Hi,
I have some 6 month old DME and I was curious if I can still use it. The bag is not air tight at all, but closed. It was stored at room temp (varied between 70-100 deg F).

I've read about off flavors from using old DME. Is it a risky move to use the stuff?

Taste it.

Leave your address before doing so and if we don't hear back from you in an hour we'll call the paramedics.:p

I'm sure it'll be fine if it's not congealed or mouldy.

I once made a batch from a 8 year old extract kit. Honestly two weeks after bottling it was pretty good but it didn't age well. At 6 months it was awfull.

That aside, DME will be pretty shelf stable as long as it stays dry. The LME like what I use in the previously mentoned kit would be a bigger problem, but not in a 6-month time frame.

Short answer: Use it

Off flavors from old extract is usually (I think always) an issue with liquid extract, which does oxygenate / go stale over time. Lots of people suspect that's where "extract twang" comes from. Dry extract doesn't have that issue, which is one reason why it tends to be preferred.
