Used to work at a beer store within walking distance of John's house - would see him in the shop most Saturday's. He's a craft beer guy, and he's one of the friendliest guys I've ever encountered. He'll also talk your ear off if you let him - dude engages with people so easily

Part of the reason I bought cases of Fantome classic when it arrived here in PA was because I wanted to drink it regularly taking note of how it evolves with regular sampling. The other main reason I wanted so much on hand is because im constantly cooking different meals and wishing I had extra Fantome on hand to pair with the eats. This weekend I had a great time fishing with a long time friend. We brought some of the catch home, I cleaned it up and let him throw some spices on it to jaz it up. I also made risotto for the first time with a melange of 5 different mushroom varieties.

The meal was absolutely fantastic and the Tome elevated it to the next level like I imagined it would. My wife proclaimed it as one of the best meals she ever had.

As far as the beer was concerned, it still has some green yeastiness to it as I noted a month ago. However, this time even more fruited/sweetness qualities came forward. Will check back in again with another bottle in a month or 2 as I feel little has changed.
 
No Mountain Goats lyrics to distract from the discussion this time but another crazy beer by danyP. Dark version of the coffee ruby. Cork came out with the loudest bang I've ever heard from a bottle of beer. Even louder than any champagne bottle I've ever heard. Poured very slowly into an Oerbier tulip glass and had to wait 10 minutes for the foam to settle down. It actually tastes a little like a (subtle) coffee version of Oerbier. I might have to buy a couple more to see if they age as well as Oerbier. Very pleasant beer and not at all "very bitter taste" as mentioned on the label.

I heard mixed reviews when this was fresh, so I sat on mine. This is excellent right now. The spices to me taste almost similar to Printemps, but it is dryer and has a little more black pepper. I really dig this, and might have to order more.


Excited for what I've got left. I thought it was excellent fresh, so looking forward to revisiting.
 
I had a super old Blanche over the weekend, no idea how old, and I didn't get a pic, but I think someone else might have gotten one. It was Fantastic. It changed so much as it opened up, from a super tropical juice bomb to a hint of ginger. Great bottle and a highlight of the weekend, along with a few other jams from our friends at De garde.

The latest (I think) batch of Blanche is getting pretty gingery. It's gone from grapefruit and weed to ginger and grapefruit. So good.
