I'm designing a beer for a group of people who really like IPAs and fruit flavor. At first I was going to brew an IPA and add peaches/apricots to it, sort of the same idea as the Dogfishhead Aprihop. But then I remembered how delicious Anchor Steam is and it got me thinking...

What about an IPA base/hop profile brewed with a California Lager yeast? Either that or I do a modified steam beer base for the malts and boost up the OG and hops to make it more like a moderately hoppy IPA. Any suggestions either way?

As far as hops go for this. I'm definitely going to be using peaches or at least a peach flavoring. I know that steam beers typically use Northern Brewer, sometimes Cascade. Would those hops work well with the peach flavor/aroma? I figure it might be interesting to mix peaches with a spicy/piney type of hop?

Based off of what I've read it seems like WLP810 is the yeast that I'll go with. I'm assuming that if I use WLP810 then it'll lend a crisp and slightly spicy taste to the beer. Am I off on that assumption?

Lastly, I want to balance the peach aroma with a hint of fresh hops. Any suggestions for dry hopping? I was thinking doing two dry hop additions. 1 oz per addition, 5 days each, probably a mix of a citrus hop and a piney hop?

Any suggestions or comments will be greatly appreciated
 
amarillo has great flavor for this type of thing.... Sounds interesting and if you keep the temp somewhat restrained you may not have as much "spicy" flavor....
 
Subscribed. I've been thinking of doing something along these lines for a later summer beer.
