Did a dead ringer ipa w/ specialty grains two weeks ago.. OG was 1.056ish used dry safale 05 pitched no starter. Ferment temp @ 67°…1 week in primary had good activity, krausen fell back so racked to secondary to dry hop for a week. Did have a nice yeast cake on bottom. Took a gravity last night.. came in at 1.013.. kit says 6 wks.. seems mine is ready to bottle?
 
Sounds good to me. Take another reading in 2 days. If it's the same and it tastes good, bottle it up!
 
I can keg my house IPA around day 6 or 7, but it really doesn't start to shine around week 2.5-3 (especially with dryhopping). If your FG is stable you can go ahead and bottle, it just might take a little more time to fully mature.

Most of my brews under 1.060 i'm going grain to glass in 2 weeks - I find extended conditioning time doesn't add a real noticeable difference on my system. That, and the turnaround time on my kegs is pretty high with having what might as well be a revolving door for friends to come in for a pint or two after work. Higher gravity beers i'll let sit for a while - I typically try to plan out having enough inventory to allow me to tie up a carboy for a few weeks to let those sit and do their thing.

Your mileage may vary, of course. For me it's turn and burn, baby :)
 
Make sure you take gravity reading again tomorrow and that it's the same. You don't want fermentation still going on, then add sugar...BOOM! Bottle bombs.
 
I will just let it go over the weekend.. I added a second hop addition, so I want some soak time. Figured this will give me time over weekend to get my bottles prepped
