The beer was very tasty. I kicked my keg in one week mostly by myself. It scored a 39 in the first round of NHC. I think I will use some kind of fining agent next time as I did have some tannins that made it a little harsher than I would like. I do 6 gallons because that leaves me 5 gallons after kettle and fermenter losses to have a full keg.

if i mash with 1.25 quarts per pound, then i only sparge with like 1.25 gallonsin order to come up with a preboil of like 7 gallons., A sparge with only 1.25 gallons seems really low. that seems very low,,, can you shed some light for me.?

I mashed with 6 gallons for a ratio around 1.3-1.4 qt/lb. Then sparged with 4 gallons and ran off until I had around 7 gallons.
