Im abou to try this saison recipe ive just come up with. My last saison got dark and hazy. Im going to speed up the cooling but what else can i do to get the beer a lighter color and not so much cooling haze thingy?
Heres my plan: bring 13 liters of water to 70 degrees C. Sdd all the grain(biab). Keep it at around 65 degrees for 90 min. Sparge with 3 liters of 70degrees water. Then boil it while adding 2.5 liters boiling water for 90 min. This should give me a total of 12 liters of beer...

Are you primarily using Pilsner malt? The mash temp is about right. To give it better clarity, cold crash it and add gelatin. It will be sparklingly clear.
 
That recipe looks good to me. I have been adding citra at flameout to my Saison batches lately with good results. It is worth a try.

Yeah, citra and cascade are my favourites but i want it to be more belgian this time. How would less malt and more sugar change the beer? I want my beer to have a lighter color.
 
I think i read somewhere that a harder boil and longer boiling time makes the beer darker? Should i not do a 90 min rolling boil?
 
Yes and no on the longer boil. (I know, not the best answer) Let me ask you, is there a particular reason you do a 90 min boil instead of 60?

No the only reason i do that is because of the first ag i made. Westmalle tripel. It was 90. Been doing that ever since
 
Okay. I would suggest a 60 min boil. As you boil longer, there are chemical reactions that cause beer to darken, this is why extract beers tend to be darker than their AG counterparts. I would try a 60 min boil and see if that helps.

Ok, so should i do the golding hops for 60min and add the saaz for the last 15 anyway?

It's possible. If you're still concerned, did you correct for temperature when you took your og reading? I did brew today with around 80% efficiency.

Yeah i used brewersfriend hydrometer temp calculator. I had preboil og of 1045. And then added that the wort was 35 degrees C which gave me 1049.
Was going to do a 60 min boil but i dont think ill boil off enough water so i might go for 75 min. My amount of water used is for 90 min boil...
