Hi all,
I have no cold room in my brewery and just wondering has anyone seen results of ageing beer in oak barrels at about 20 degrees?

A general consensus is the ideal temperature for ageing in barrels is about 10 degrees celsius but alas I can't get my cellar down to that temp.

Many thanks,
Rob

Rarely have I ever seen a barrel in a cold room. The best temperature for barrel aging is 12-15C.

If your aging area is warmer than that, expect flavor changes to occur quicker. You may just need to taste your beer more often to decide when is the appropriate time to remove the beer from the barrel.

agreed, barrel aging is done around room temperature or a bit cooler. Both traditionally and in modern brewing.

If you tried it cold, it would take much longer to get the desired effect
