I am wanting to make a huckleberry wheat and was wondering how much fruit I should add and when I add this? I have read that you should use frozen berries so that the cells of the fruit are broken open and the sugars are released. And I believe I am supposed to add to the secondary, but any extra info would help.
 
That is how I add my fruit, it works well to give a nice fresh fruit character. After fermentation settles down you can rack off the fruit to another fermenter to help reduce the amount of pulp that makes it into the bottles.

The general range for fruits is .5 lbs/gal to 2 lbs/gal. The low end is good for assertive fruits like raspberry, while the higher is better for mild fruits like peaches (or if adding fruit to a bold base beer). I don’t eat a lot of huckleberries, so I’ll leave it to you to peg where on that continuum they fall. You can always go low and add more if the beer needs more flavor.

Thanks for the info. I week do some more research on the huckleberries and how much to add. I'm not sure how many pounds I currently have but I think it's 2 or 3 quart ziplock bags. If it's somewhere between .5 and 1 lb per gallon I'll probably just add them all. Huckleberries are not real powerful in flavor but have a tart flavor. Like a tangy blueberry.
