How to scale recipes up to commercial volumes

Long story short, I won a couple competitions with my home brew recipes, and I have been asked to be brewmaster at a new 15bbl micobrewery. I am confident in these recipes, confident in my skills, and confident I can help make this a great brewery. How do I take my award winning 5gallon batches up to 15bbl recipes. I do know that scaling up by just multiplying doesn't work due to brew house efficiency and hop utilization. Any help would be great.
 
You'd probably be better asking in pro brewer interactive, since those guys generally have more experience brewing on a commercial level.
