Higher alcohol tolerance beer

The thing is thus far i have only brewed from kits! I have never brewed an Oktoberfest from scratch. I would plan on using malt extract rather than all grain. I know that i would need a higher tolerance yeast. I also am wondering if this higher test Oktoberfest brew could be made with out sacrificing taste.

You should stick with an Oktoberfest yeast, 8% isn't a problem. Keeping the flavor balanced and not ending up with malt syrup will be a challenge.
 
Why??????????? Just because you can doesn't always mean you should.

IMO, it's a waste of good beer trying to brew something very few would be willing to drink.

There is no such thing as "Higher alcohol tolerance beer". Higher alcohol content, yes.
 
personally, i homebrew for the satisfaction of making a fine tasting[I beer. if the alchohol content is a little higher or lower than some of the retail beers i buy, then so be it.
