High temp wire for temp sensor?

I was going to make a temp probe to stick in my mash. It would also be used to detect when boiling is nearly reached. I planned to use am LM335 diode temperature sensor stuck in a piece of copper or stainless tubing. But most of the wire i find is marked "75C". I'm worried it will turn to goo if i boil it. Anyone done it?
 
You can get silicone coated wire too. Maybe you could DIY by coating bare wire with RTV silicone. Or epoxy.
