Thought that I would post a little introduction. I've used HBT as a resource for quite awhile now to research my plans for homebrewing, and just finally brewed my first ever batch this past Saturday!

The brew is an AG sweet stout - of sorts! :)

I'm fermenting it with Wyeast 3787 Trappist High Gravity with some candi syrup in there to stiffen it up. I only achieved about 70% efficiency but that's because it was getting late and I ran the sparge a bit fast.

Speaking of getting late - that's where it gets its name - Galaxy Stout. Racked into the fermenter around 3 AM by the light of the stars. :)

7.5 lb - Kölsch (52.6%)
2 lb - CaraMunich II (14%)
1 lb - CaraFoam (7%)
1 lb - Flaked Oats (7%)
0.75 lb - Chocolate (5.3%)
1 lb - Belgian Candi Sugar - Dark (7%)
1 lb - Belgian Candi Sugar - Dark (7%)

HOPS:
1.5 oz - East Kent Goldings (AA 5) for 60 min, Type: Pellet, Use: Boil
1 oz - Hallertau Mittelfruh (AA 3.75) for 60 min, Type: Pellet, Use: Boil

MASH STEPS:
1) Infusion, Temp: 150 F, Time: 60 min, Amount: 16 qt
2) Sparge, Temp: 170 F, Time: 45 min, Amount: 14 qt

OTHER INGREDIENTS:
1.5 lb - Lactose, Time: 10 min, Type: Flavor, Use: Boil

YEAST:
Wyeast - Trappist High Gravity 3787
Starter: No
Form: Liquid
Attenuation (avg): 76%
Flocculation: Med-High
Optimum Temperature: 64 F - 78 F
 
Oh man... I just racked this stuff to secondary - it tastes like a mocha latte! Which is pretty much exactly what I was after - yay!!!!!

Can't wait it get it into the keg!
