Thought that I would post a little introduction. I've used HBT as a resource for quite awhile now to research my plans for homebrewing, and just finally brewed my first ever batch this past Saturday!
The brew is an AG sweet stout - of sorts!
I'm fermenting it with Wyeast 3787 Trappist High Gravity with some candi syrup in there to stiffen it up. I only achieved about 70% efficiency but that's because it was getting late and I ran the sparge a bit fast.
Speaking of getting late - that's where it gets its name - Galaxy Stout. Racked into the fermenter around 3 AM by the light of the stars.
