I have my own fruit, blackberries, raspberries, muscadines, etc. Can I start a wild ferment from frozen fruit? I am thinking about flash freezing some of muscadines this year just to use as brew-starters later. They always have a very nice yeast bloom on them.

No disrespect but, if you want to kill wild yeast to add fruit in beer the common advice is to freeze and thaw with another freeze and thaw that will also break down cell walls as well as kill any micro organisms including yeast during the process.

With all due respect, that would be a good way to find the most hardy yeast.

I have never brewed beer, I only do cider, wine and mead. So I know nothing of that process.

But about yeast in general, I have heard both that it survives freezing and that it does not. So I am looking for some clarify
