Howdy!

I was writing up my ingredients list to go out and grab stuff for a Pumpkin Wine and saw this: http://www.harpoonbrewery.com/beer/102/pumpkin-cider

Tasting Notes from Harpoon's Site
Appearance: Straw/light golden
Aroma: Freshly pressed Northeastern Apples, traditional pumpkin pie spices and a hint of pumpkin
Mouth feel: Light, crisp, tart, cleansing. Sprightly.
Taste: Apple forward with all the traditional Autumn flavors of pumpkin, cinnamon, ginger, clove and nutmeg, and a touch of sweetness for balance.
Finish: Dry, light, refreshing.


I want ... I want ... I want!!!

So instead of a Pumpkin wine I think I'm going to go for a pumpkin cider first.

Here's what I may try and put together.

Pumpkin Cider
Amounts given should be easily adjustable for any size batch
I'll be making 6 Gallons

1 29-oz. Can Pumpkin per Gallon
1 lb. shredded sweet potato per 5-6 gallon batch -- adjust as necessary
Apple juice
1-1/4 cups sugar per Gallon
1/2 tsp. Pumpkin Pie Spice per Gallon
Yeast Nutrient per label
Nottingham yeast

I'll probably leave it for 2 weeks and then keg.

Anyone see anything I'm missing?

I may do up a Pumpkin Graff next if the cider turns out well!
 
You might want to add some pectic enzyme to help ensure that the potato and the squash (and the fruit) does not end up cloudy.
Does the pumpkin in a can have added sugar and spices? What is your anticipated starting specific gravity? Will you need as much additional spice as you suggest if the canned squash is already spiced?

arghhhh I see that the OP was posted 2 months ago... How did it turn out?
