Gluten free best bitter

I turned to brewing cos I had to go gluten free. I'm looking for a best bitter recipe that I can make in New Zealand with only sorghum malt available.

Any ideas?

p.s. I'd consider partial mash too, as its going to improve the beer and only complicate things a little.
