Ok so I can't really call this a clone for a few reasons.
1. I used pale 2-row malt instead of pilsner malt. (we prefer 60 minute boils to take less time, didn't want DMS)
2. I haven't tasted this brew
3. I don't know the ibu's

But I based the malts and hops and spices on the info that is given on the Ommegang website. I hope it is a tasty red.

This recipe assumes 62% brewhouse efficiency. I based this on my recent efforts. But I had hoped to increase efficiency. (67-68% brewhouse efficiency would result in the 6.8%abv of the actual Fire and Blood ale.) Our own process had a few setbacks.

1. I mistakenly used raw unmalted spelt. I think this cost us .004 points on the OG. (according to the recipe builder)

2. Our efficiency was actually lower than it was for our last brew, and our OG was only 1.050. I think we will finish at 5% abv.

I used 1 whole star anise, according to some threads this is just right for a 5 gallon batch. According to others, it could be too much. I broke it apart and it was only in the boil for 3 minutes. I wasn't fully prepared and did not have licorice root.

I used 1 dried ancho chili pepper, removed the seeds, and boiled for 5 minutes. This is not a strong pepper and I probably could've used more, but I'd rather not taste the pepper at all, than have a beer that was too spicy.

I initially was shooting for a BU/OG ratio of .7 or less. Due to our lower OG/efficiency, we will be around .9.

I hope this is not too hoppy of a beer. I am curious as to any feedback. Do you think this will be a decent tasting brew, or too hoppy for a red?
 
Noticed an error in the original recipe. I had typed 5.5 gal batch size into the recipe builder. I'm not sure why. (Although I could have probably collected 5.5 gal, more than usual left behind in bottom of boil kettle, initial boil volume was .5 gal more than I was expecting). Here are the numbers on a 5 gallon batch at 60% efficiency. I know many of you are running on higher efficiencies, this is simply made for my system. I left the grain amounts the same and dialed back the bittering hops slightly.

This beer turned out very good, one of my favorites I've made. Obvious similarity to the GoT brew, with one major difference. The main noticeable difference between this and the Ommegang brew was in the yeast. This actually worked out in our favor as my beer was preferred in a side by side by a few people who didn't like the belgian yeast flavor in the Ommegang brew. The pepper/anise was not really detectable, yet the beer had a very slight spice/bite that I'm not sure to attribute to the rye or the pepper. I'd use more pepper next time and see if I notice it. I'd also use a different form of spelt. The name we settled on; "Spelt Rawng".
 
First time I've heard of GoT brews. Very interesting ingredients, glad to see it turned out well
 
Has anyone changed this to a Mini Mash or Extract version? I would love to make a batch of this before Season 5 comes out so I can have a keg of it for a party.
