I'm brewing a small batch of a Winter Warmer using Wyeast 1099 Whitbread Ale. It'll be my first time brewing with Wyeast. The total batch size should be between 2-3 gallons. I have the yeast now and plan on brewing 11/2. How should I store the pack until then? Also, when should I take it out of storage and activate it if I'm brewing that Saturday around noon? Should I use the whole package or just a portion of it?
