Im working out a ris recipe (im just buying the nb imperial stout kit) and want to add cherries to the secondary. I'm going to use cocoa nibs, and after reading a few different websites and forums kind of decided on a 4oz of cocoa nibs for 4 to 6 weeks. Does this seem like enough to add a decent chocolate flavor? I mean, more than what the kit will produce already.

My main issue with this, is the beer will sit in the secondary for 2 months. And I wonder how long I should let it sit on the cherries. Any ideas? I'm adding 5 lbs of fresh cherries...I don't know if I should crush the cherries when I add them or will leaving them whole produce any flavor.

Sorry, just when I think I'm getting the hang of brewing I realize how much of a newbie I am and how many questions I have.

Thinking about the same kit (w/o the cherries) but the Cascade hops seem out of place in a RIS. I may sub Fuggles for them. Not sure if Cascade and cherry would go together either...
