I decided to brew up a slightly-modified version of the 888 RIS, and it's just come out of the bottle for a test drive. At about 5 weeks old (3.5 primary, 1.5 bottle), it's amazing! I hit something like 10% with an OG of ~1.092, and this baby's not boozy at all! Super rich, lots of coffee and chocolate, and an awesome sweet-ish malty fruitiness. Almost like a Baltic porter. I thought this one would need more time to be so good, but I'm quite pleasantly surprised :D

Haha that's so accurate. Thanks! I'm gonna save a twelver or two and a bomber. one for summer, one for fall, and one for my birthday in December. I'm gonna brew this bad boy again though! There's also a mocha stout en route for this weekend's four brew sessions.

Save a couple for your birthday a year from December. You'll find that they change further in that extra year too.

Now is the time to brew another so you will have enough to sample and still age some really well.:ban:
 
By the time you save all those beers for future drinking, you will need to brew again, because there wont be anything left to drink now... I like to brew my stronger maltier beers in 10 gallon batches so I can drink both now and later...

Yeah, I've noticed that problem >.< I have four slots kn my pipeline, so I usually keep two quick turnaround, one of my house porter (a recipe in progress), and a bigger brew like a trappist ale or stout. Fortunately, I just bottled up four batches, so I'll be able to keep my hands off of a few of these while I make more
 
Definitely age some for awhile. I brewed a Founders Breakfast Stout clone back in 2014 sometime. It really wasn't all that great when I first started drinking it. I basically just shoved it into the back of my beer cellar (aka, the space under our stairs in the basement) and forgot about it for a long time. Now, it's pretty damn good.
