some friends and I are having an Oktoberfest soon, and I am bringing two batches of home brew. A Vienna lager (my first lager) and a wheat. The lager was in primary 3 weeks, and secondary/lager for 3 weeks. I put it in the keg, and have kept it laggering/carbing for a week. It still taste a little green and has some possible off flavors..maybe astringent? I need to move it from the keg to bottles to make room for the wheat (only one keg). My question is will it continue to age/improve in bottles better if I keep them cold/lagering or should I let them go to room temp to speed any cleaning that will happen? -also, if I use some gelatin to clear/drop some floating stuff to reduce any astringency/tannins will it inhibit the aging at all? The party is in 3 weeks.
