I have a Kolsch in the fridge bulk aging at about 34F. It's been in there for a month, which I know isn't a problem. However, I fined with gelatin when I transferred to secondary. My intent was to bottle it a few days after fining, and age in the bottles.
That long-winded prelude brings me to the question. . . if I had actually planned on bulk aging for a month, would you wait to fine it until closer to bottling? Or is it okay to fine it and leave it for a month before bottling?
It's one hell of a clear beer, that's for sure.
