Genuinely curious as to what this means as I've never heard the term "slowly carbed" before. Are you just saying that this was bottle conditioned for six months?
Ya...sounds weird to say about anything but wilds or Belgians. But ya....bottle conditioned. It was a lil goofier as we barely added anything and sorta capped it like you would a lambic and waited for the few damn near dead yeasts to eat some of the pastry. It added a cool complexity to the subtle carb & flavor.

Looks like my Tuesday afternoon just opened up.

Don't think I'll be able to make 6pm. Did you shove any in kegs, and can I drink from said kegs at some point?
unfortunately no, but we have a few more cases goin out to a couple other stores later in the week. but we doubled our barrel aged stout quota by going two 30 gallon kovals for 2018. at this exponential rate we should reach GI BCS numbers by 2052 but factoring in economic downturn in 2021 and the alien/bug war of 2037 where we have co-ed showers I imagine you’ll get a bottle sometime in the early 2040’s. I imagine we’ll have a keg for the opening next year.

Checked out Haymarket yesterday afternoon and ended up trying 6 new (to me at least) samples from their draft list including 3 lagers (Wet Hopped Pilsner, Simcoe Dry Hopped Lager and Marzen) as well as Janna's Red, the Dry Hopped Apple Pale Ale (meh) and the Simcoe IPA.

Everything was solid aside from the Apple Pale Ale (which wasn't bad per se, but wasn't my thing at all, like a mixture of a Pale Ale and New Glarus Apple Ale), but the Wet Hopped Pilsner and Dry Hopped Lager were my favorites.

Also when did parking get to $4 an hour in that area? West Loop has turned into Downtown it seems like with regards to parking prices.

Also checked out the updated / remodeled Clybourn yesterday afternoon, and don't have a ton to add that others haven't already said about it. Sad I missed Adan though as apparently he was working after I left.

First stop at the redesigned Clybourn, and it is certainly brighter than the old space. Not as warm and inviting to my eye, but cleaner / more modern / brighter to be sure. The kitchen and brewhouse look gorgeous, and love the vintage bar and that they kept the Siebel room. It'll take a while for me to get over the changes, but the world will keep turning.

Also $8 for 5oz of Bourbon County will probably help keep it on draft year round.

I know you ate at Au Cheval so you probably can’t answer but maybe vav or someone else can. Did they fix the food? It had slid so disastrously downhill before the remodel I stopped wanting to go there anymore.

Please note: We will not have bottles for sale at the brewhouse.

Sessions are at 10am, 12pm, 2pm, 4pm, and 6pm.

Tickets are $100 plus tax and fees, and include a take-home bottle of one of this year's variants, small bites, and a BCBS snifter!
